A week had already passed since Shizuko was consulted by Shibata and the others. But I don't hear any stories of military discussions being resumed. Still, Shizuko was optimistic that the lack of stools was just good news.

Cacao beans account for about a third of their weight. The task of reducing this moisture content by about 8-6% is called the drying process.

The drying operations carried out at the place of origin are carried out by laying 'sukoko' on a wooden frame about one metre high in an open area or the like, arranging cocoa beans thereon and carrying out daily drying.

The taste of cocoa beans will depend on the local soil fungus and drying method, as twitching and fermentation will also proceed during this drying operation.

In modern times, after this drying operation a final quality check is carried out, only the passing cocoa beans are packed in hemp bags (standard 60 km) and exported to various parts of the world.

"It feels good and dry."

Japan has a warm and humid climate, with prolonged rainy seasons making it difficult to dry in the open air. So Shizuko initially thought about doing heavenly sun-drying in the vinyl house.

However, there is waste water from hot springs passing through the vinyl house, making it a very humid environment. Since it was clearly an inappropriate environment for the drying process, a new small plastic house (made of transparent faktis) was created that diverted waste and end materials.

With the future expansion of cultivation, a large drying facility will eventually be required, but for the time being operations will be carried out at this facility. Due to its main purpose of drying, it was designed with an important emphasis on breathability, and much wood was used.

The impression is closer to a barn with skylights rather than a vinyl house, as only the ceiling part will be the part where expensive transparent fabrics are used.

Dedicated facilities had been provided, and despite the rainy weather, the cocoa beans were good and dry. Even so far, however, only "chocolate ingredients were made" and further work was awaited to finish the chocolate.

"Next we have to process the cocoa beans to the cocoa mass."

The dried cocoa beans are naturally wrapped in a hard outer skin and the contents need to be removed and removed for processing into cocoa mass.

For this reason, the cocoa beans are first gently roasted and cracked in the outer skin (husk). Then hang it on a mill of water wheel power and crush the cocoa beans roughly.

The crushed cocoa beans are removed from the outer skin using tang (and um) (large using water wheel power for sorting) and sieve (sieve). The remaining embryonic milk (nib) moiety is called cacaonib.

This nib contains more than 50% cocoa butter, which is a lipid, in weight ratio. Finely polishing and pasting this nib is called grinding.

This is also connected to the power of the water wheel, and the nib is crushed into thin pieces by an artisanal grinder from the technical district. As it is finely ground, the cocoa butter it contains frees up and becomes pasty by dissolving in the heat of friction.

From the roller portion, which is the final step of the grinder, a paste-like cocoa mass is unloaded passing between the plurality of rollers. Because this cocoa mass is affixed to the roller, the iron blade was removed by removing it.

If it is a modern machine, it is crushed until it has a sufficient particle diameter in a single task, but it is cruel to ask the primitive machines of the Warring States for that much accuracy.

Therefore, the extracted pasty cocoa mass is hung on the grinder again, and the accuracy is compensated by repeated processing.

Thus the smooth pasty cocoa mass will be mixed with sugar and sugar-free condensed milk (ideally whole milk, but given up due to high manufacturing difficulties) and mixed over a long period of time.

The essence of cocoa mass is in the oily and fatty ingredients and is not easily mixed with liquid sugar or regular milk, so mix together with as much moisture as possible removed. Still, it took time to blend the powder, etc. into the pasty object, and a strong force was needed because of the large resistance.

Accordingly, the mixer (mixer) used here is powered by livestock. The figure of a cow connected to a stick and circling around the perimeter of the mixer was reminiscent of a domestic handicraft.

The product that can be made is called chocolate dough (duh) and proceeds to a process characterized by chocolate chocolate.

It was created in 1880 in Rudolph Linz, Switzerland, and for more than a hundred years to this day, it is called the heart of chocolate making that is the conching process.

Chocolate confectionery is commonly spoken for if you are a modern person, but there is a manufacturing process behind it that takes a lot of time.

Shizuko knows the finished form, so she can proceed with manufacturing without hesitation, but there was a very long history before the manufacturing method was knitted.

Traditionally to Europe in the sixteenth century, cocoa was the term used to refer to drinks until the emergence of a technological innovation known as the Four Revolutions of Chocolate in the nineteenth century.

However, unlike modern cocoa, chocolate at the time was bitter and unusually oily. As a result, it was treated more as a medicine than a preference at the time, and a delicious beverage in flattery.

After that, chocolate, which has been a drug for a long time, came into the nineteenth century with various technological innovations. The invention, which can also be called its pioneer, gave birth to a voice in the Dutch food manufacturer 'Van Houten'.

Kasparus van Houten, founder of Van Houten, braided a way to reduce cocoa butter, which contained more than 50% in cocoa beans, to about half by hanging it on a hydraulic pressing machine in 1828.

More dried cocoa mass was crushed and powdered to distribute as a cocoa powder that was easily soluble in hot water.

The ensuing second generation of Coonlart Johannes van Houten develops a method of treating cocoa beans with alkaline liquid, the Dutch Process. This creates a 'cocoa' that neutralizes the acids produced during the fermentation process and increases water solubility.

This technological innovation was derisively created in 1847 to produce solid chocolate that could be eaten directly without dissolving in hot water, and in 1875 Henri Nestlé, founder of Nestlé Corporation, developed a more mellow milk chocolate.

At the end of the Four Revolutions, in 1879, Rodolph Linz discovered an important conching method in making soft chocolate (later a brand called Linz Chocolate) that melted in his mouth due to coincidence (with theories).

When these four major inventions are born, chocolate companies such as Linz in Switzerland, Nestlé, Cadbury in the United Kingdom and Hershey in the United States will be created, and mass production by factories will make the chocolate, which until then has been a luxury product, accessible and popular to the general public.

For the record, chocolate is only a delicious sweetness for mankind, but it can be a harmful substance for dogs and cats. In chocolate there is a xanthine derivative called theobromine.

This is caffeine and other companions, and for humans it is not harmful unless consumed in excess large quantities. However, dogs, cats, etc. have slow metabolic rates of theobromine, causing excessive excitement and dehydration, and in the worst case, death.

Tempering is a temperature adjustment, first using hot frying to heat and dissolve the chocolate to nearly 50 degrees. Remove the liquefied chocolate from the hot sauce and use ice water or the like to cool to around 28 degrees.

Then hang on the hot sauce again to warm the chocolate and maintain a temperature of about 30-32 degrees. The temperature of this tempering varies depending on the chocolate maker and the type of chocolate.

In this way, the chocolate that is finished in a glossy state is poured into a pre-prepared mould and cooled to complete. If I were to say ideal, I would need a maturation period in a thermostatic warehouse called ageing, but I had given up on it as high hopes.

If I finish chocolate, the expiration date will be limited to about three months. For this reason, it was decided to save the amount not to be used this time in the state of the pre-conching cocoa mass.

In the case of a cooled and solidified cocoa mass, it is possible to preserve it for one year as long as the temperature is noticed.

"It took a lot of work, but it's finally done! Hmm... a few steps below modern commercials on boulders, right? Well, I guess the powder just didn't blow."

Peel the cold, hardened chocolate from the mold and arrange it on a plate. Removed items that did not peel well, cracks, etc. and sorted items that looked good and offered them to Nobunaga.
