Actually, there are parts of this cocktail that you can't technically call my original.

Originally, I added an arrangement based on a recipe a customer told me about.

And I can tell you I made this cocktail because I remember where it came from.

I taught the customer a lot.

It may be a good story to hear, but many customers are more familiar with 'bartenders' than with apprenticeship bartenders.

When you graduate from an apprenticeship, it's always something you teach your customers.

And one of the things the customer taught me was "Coffee Cocktails".

The feelings taught in the past came back to life, and I made this cup.

I wanted to show you the answer to what I taught you.

I wanted to tell the shop owner who told me so much about the coffee that this was the answer to using the coffee.

I do not use four large distilled liquors on the base.

But this is also one of my foundations.

If you think about it as a business deal, naturally you don't care what this cup tastes like.

But I have expectations. I truly hope it tastes as good as it can meet it.

If I'm not satisfied, I even want to kick this young man's demands.

I didn't deserve to be old enough to think so, and the shopkeeper exhaled.

While I feel that way, I try to spread that across my tongue. Then, the flowering flavour was slightly different from that of the citrus.

It is' something 'with unspeakable richness.

'Something' that mingles without a shortage of coffee and enhances each other.

It seemed like a refrain from the sweetness of 'chocolate' that I sometimes serve when I drink coffee.

I see, while enjoying it a little, its sweetness flows loosely, but surely. It was also a slight bitterness of citrus, the shopkeeper understood.

If you swallow the liquid while you enjoy it, it's remarkable.

As I went past my throat, the coffee-like richness and the gorgeous sweetness passed like dancing.

What then lingers in the aftertaste is the quiet citrus flavor, combined with the acidity of the coffee.

It tasted strange.

If you think it's citrus, it never is.

Or, I can't even say for sure it's chocolate.

Always either way. And that's a wave of flavor that I'm just saying is right.

Most surprisingly, the ambiguity continues to affect coffee.

It gives an interesting and ridiculous change in taste, which can never be tasted with sugar or milk.

What spreads behind the brain is such a mild flavor, like an idyllic coffee field, where the light of a warm day falls.

That's what brought the two flavors of citrus and chocolate together.

I can't say the combination that matches in me fits the mouth of 10,000 people.

The image of mixing fruit with coffee would not be very common in Japan.

But it is the heart of that adventure that, in a way, is also a cocktail.

Making it faithful to the basics means thinking about the balance of flavours.

But whether the flavor is well balanced or not is something that I think of the flavor of the ingredients in my head, mix them together, and actually try to make them and remember a little bit.

For example, do melons and coconuts fit?

For example, does raw cream and lemon go together?

For example, will brandy and lychee fit?

If you've never tried a combination in your head, you have to be sure with your tongue.

Of course, there's something like a stone in making a cocktail.

Is it compatible with seed-based liqueurs and cream-based liqueurs, or is it compatible with fruit-based liqueurs and carbonation? There are many combinations that are said not to be removed.

But that's why you shouldn't even be delusional about it.

In the end, it is only by checking yourself and remembering the flavor that you will be able to create the flavor you seek.

And what I wanted to make on this occasion right now.

It was "I used coffee, a flavour I can't produce with coffee".

That was the "cocktail" from me that I wanted to send to the owner who made the coffee known.

The shopkeeper laughed so he could see how I felt like that.

"I did receive your feelings."

"... you find out"

"Ho, of course. It tastes interesting. Best combination of coffee and 'something' I've ever had. But you do know, don't you? Cocktails that make use of coffee."

Not to repeat, but this cocktail is an adventure.

If you're not adventurous, it still goes great with 'whiskey'.

Otherwise, the name 'seed-based' was given earlier, but the coffee itself is, so to speak, a 'seed-based' beverage.

Liqueurs of the same seed system ─ many go well with coffee, such as the liqueur Amaretto, which uses apricot kernels, and the hazelnut liqueur Frangelico.

The same goes for cream-based liqueurs.

This time, I knew it and dared to use 'Coantro'.

If you're not adventurous, it's quite delicious to just put 'Cocao White' up with coffee.

The words sounded like they were craving my behavior.

But I kicked it. I abandoned the "safety measures" and went on an "adventure".

That, as head of the store, if you ask me, might not have been a very praiseworthy action.

I just thought that, in one turn, the shopkeeper had a gentle grin.

"What did you want to make on the spot? 'Purpose' has turned into 'pleasing me', hasn't it? So instead of a cup for 10,000 people, I wanted to make a cup that surprised me for being familiar with coffee. That must be your personality."
