We took the morning train to the White State Distillery.

Take the express transfer at Tachikawa Station on the central line and get to Koaburazawa for approximately an hour and a half.

From there, there was a shuttle bus leaving for the White State Distillery, which reached the White State Distillery before 10: 00 while following the attendant's guidance.

It is a distillery built in the forest, said to be rare worldwide.

Sometimes it was February and the temperature was quite low, but it felt clear for that matter only.

"Mmm. The air is delicious."

I got off the bus and said that Ibuki, who had just finished the reception, was coming back to me.

The posture with the back turned against the bow accentuates the feminine irregularities, even in moveable and plain clothes. The bag I put on my shoulder also makes it all the more exciting.

There were a large number of other visitors aboard the bus, but not many young people. Even less so when I become beautiful, I realize for a long time that Ibuki catches people's eyes.

I just talk a little faster, I tell her.

"Thanks for the reception. Okay, let's go."

"Yeah? He seems to be aggressive... haha"

He noticed something, Ibuki narrows his eyes like a prank-loving cat.

What Ibuki would have expected is not that far off, but it is regrettable to admit it. I, uh, sigh and walk out.

"Don't wait. He wants me to come with him."

"Well, you should just follow me."

"Yeah, I will"

In response to my reply, Ibuki always smiled more and more nicely, with a perfect fit next to me.

Complete the tour reception at the museum on the property. After a tour of the building for a while, a gathering of tour participants was immediately announced.

When the two of us headed to the entrance, the faces that were still on the bus together until earlier were still sitting back on the bench provided for the occasion.

There was a screen on the front of the chair, which seemed to be the first to give an explanation while showing some footage there.

"That was fun!

"Right!

And after roughly an hour and a little bit of touring, we shared our thoughts with each other with a little excitement.

By the way, where we are is like a bar dedicated to tasting a variety of White State raw alcohol, which is also located in the facility.

Let's briefly explain how to make whiskey.

First, what is the original ingredient when making whiskey?

The answer is barley and water.

There are certainly other whiskies made of various ingredients, such as corn or rye.

However, the whisky known as single malt, particularly typical of Scotch whisky, is made exclusively of barley and water.

Then what is' malt 'and the answer is barley malt.

And malt is what was dried when the wheat grains germinated. This change in germination creates the sugar needed to produce alcohol from barley starch.

After germinating the barley, it is dried using gas, charcoal, peat, etc., and mixed with the serving water after crushing it to make the wheat juice.

This infused water, also known as' Mother Water ', plays a great role in creating the flavor of whiskey.

The wheat juice you can make seems like sweet wheat tea.

By adding yeast to that wheat juice and fermenting it, sugar is reborn into alcohol (and carbonated gas).

What we can do is called fermented grains, and we finally enter the process of distillation.

Distillation in this case generally fits in the sense that only alcohol is extracted from the mixture of alcohol and water to increase the concentration.

A high alcohol liquid produced in this way is the 'New Pot' on which the whisky's original liquor is based.

From here, it becomes mature in barrels.

As soon as the whiskey is ready, it is a colourless, transparent shade, no different from any other distillery.

From here, pack it in a barrel and let it sleep for years to decades, and you'll be reborn into an amber liquid that condenses the flavor.

and this is what happens if I briefly explain it.

On a tour of the White State Distillery, you can take a closer look at them and actually look around.

They can carefully explain the morsels that are fermented in the wooden barrel, the distillation cauldrons that are actually used, how the barrels are arranged in a sloppy manner, and their materials.

Speaking of which I'm particularly surprised, have you heard that the planted water when making White State is actually the same as' natural water in the South Alps' out of Suntory as well?

At the end of the day, I was given a taste of some of the raw alcohol from White State, a process of dissolution.

"But you looked like you had fun taking notes, but what are you gonna use them for?

"Hmm?

He asked Ibuki, who was looking at the note, to rebut the contents of the previous tour.

During her tour, she was taking notes on every occasion.

What about the alcohol content of the morsels, the distillation cauldron is made of copper, the type of barrel (is it a barrel just a hogs head), and the angel's share.

I was moving the pen because of it so that I wouldn't leak every word of the conductor.

"I'll look back later. You'll use it to review it."

"What are you gonna do?"

"When you come back, you'll enjoy it deeper. You want to explain angel's share to your friends."

"... heh"

Apparently, for her, both her university lectures and her tour of the distillery are equally studious. I lose my head in that attitude.

Then angel's share is the phenomenon of the raw alcohol in the barrel volatilizing naturally and decreasing in quantity. It's a romantic analogy, considering that the angel drank the portion.

"What's wrong with you? You will come again. [M] It's important to review."

Ibuki nails me with a slightly sharp voice when I was thinking about crap.

"Oh, come on, so take your own..."

"What? You don't want to come back?

"... no, I'd love to come back"

"Then I can't help it. I'll copy it for you later."

"... Hi"

I gave Ibuki a slightly greater gesture of surrender.

Seeing Ibuki snort satisfied, I felt indescribable.

As always, you don't care about my opinion.

"Oh, I think I'm ready, I'll get it."

When Ibuki turned his attention to the counter, he noticed the completion of the order visibly even though he was not called, and went to pick up the groom and the item of the order.

What kind of bar is this? As I mentioned earlier, it is a bar where you can taste the constituent raw liquor of White State.

What is constituent raw alcohol in White State in the first place?

It is about the various whiskies that make up the White State, mixed together when we bring the White State into the world.

White State doesn't age distilled alcohol in barrels and pound it out as it is.

For example, to dry the malt, the taste changes with or without the use of peat.

For example, the flavour varies depending on whether the type of distillation kettle is thick and short or thin and long.

For example, the taste changes depending on what kind of wood the distilled liquor is stuffed in and how many times the liquor has been stuffed.

The White State Distillery makes all kinds of raw alcohol in one place.

It creates a single brand called 'White State' by mixing a complex mixture of several varied raw alcoholic beverages.

"Thank you for waiting."

Ibuki returns looking like a coward.

The basin in my hand had five different glasses on it.

"Are they each?

"Eh, he's the guy I drank during the tour earlier, except for Lightly Peated, so I guess he's got a smoky guy and a sherry barrel one, plus" New Pot "in" White State "and" White State Twelve Years ""

While pointing each finger, Ibuki was excited and his eyes glowed.

Then, while we spin and drink, we fight the feelings of each original liquor or brand.

You think Newpot is rough, shochu-like and exciting?

Sherry barrels are thick, but you think they look somewhat heretical?

You think Smokey is still smoky?

Do you think "White State", which is a product, is well balanced after all?

Forget about the plans ahead, and we kept talking about it until we got a little drunk.

Along the way, when Ibuki said to wash her hands and disappeared, I remembered the last thing the tour guide said.

People who work in distilleries seem to think about the alcohol they are involved in.

Who opens and who drinks the raw alcohol that I am now packing?

Who packs and who drinks the raw alcohol that I am opening now?

With that imagination, he said, we take each and every process seriously.

That felt a little like the imagination story Torisu used to say.

"Oh, nice view"

After tasting until we were satisfied, we decided to visit the Whiskey Museum in White State.

The ground floor section is a floor where you can easily study the history of the Suntory.

Upstairs to the top, more retrospectively than that, the discovery of distillation through ancient liquor making and alchemy, stories of the whisky's intimate age, and stories of 'In' and 'Tavern', the liquor store's stirrups.

And the birth of "Trisbar" in Japan, among other things, made it possible to learn the history of whiskey.

We would have stayed there for hours because that's what we read carefully until the explanation that other people would fly.

And when you go upstairs, the museum ends.

On top of that, there was a spectacular passage, like a lookout space.

"Get your ass over here!

"Why are you doing so well when you came up the stairs?"

I'll invite Ibuki to come, exhale with Hee-hee because of lack of exercise, and I'll line up.

Satisfied that I had caught up, Ibuki was enjoying the view from it with a light stretch that seemed pointless.

"That's the silo, isn't it? So, that's the maturation place, oh, it's hard to see, but there was a distillation kettle. Mm-hmm. What a mountain with all that snow."

"Come on. Didn't you look into that?

"Embarrassed"

After laughing like a light, Ibuki confesses that she was quite blind to alcohol.

As it were, we were only watching the view silently for a while.

The time is almost evening. You won't have time to go even though Ibuki is the other winery I was looking into.

"You're hungry."

"No, you haven't eaten anything at noon."

"I thought you'd get drunk."

"No, you're not that strong in the first place."

Talk absurdly and be a little silent again.

She felt as if she was waiting for something.

Perhaps he felt that I had something to ask him today.

"Ibuki"

"What?"

Speaking up, Ibuki turned to me clearly, as if it were a lie that he had been looking at the scenery in a blur until just now.

I wandered a little into her serious eyes.

"Actually, I need to ask you something."

"What is it?

Ibu smiles with a dust.

I only have one more thing, breathe in, and ask.

"Ibuki, why are you here in the Department of Information Engineering?

"............... Yes?

Ibuki, a little stiff, asked back properly.

"No, so I was wondering why you're studying the program when you can do so many things"

"... uh. navel to be. Is that what you're going to ask now"

Ibuki was holding his fist as if to put up with something.

I can see that face is very complicated and distorted.

I'm glad you asked me about yourself.

Well, it seems a little unfortunate that they missed their expectations.

"Well, that's good. But why did you do that all of a sudden?

"No. Not so suddenly. I think I can even look at what's going on today. Something more different, not a programmer, if you were me. For example, if you like alcohol that much, it's not surprising that you want to get a job at Suntory or something."

I mean it.

Ibuki has never seen anything special before, obsessed with the program.

If you do it, you can do anything, so it won't mean it's not for you.

But that means you can be anything.

It seemed like there was no reason to choose the program.

"... then only in total. Can I talk to you for a second?"

With the sunset on his back, Ibuki started talking about herself by herself.
