The Coffee Shop in a Different World Station

27 Winter Festival Poetry and Soup Controversy (3/4 pt)

Two days after that, Takumi and Roland were beginning to make “white Almeja soup” in the kitchen, which was showing complete calm soon after closing time.

The ingredients available at the kitchen table are sanded almeha and salted smoked meat (bacon), seboria (onions), sanaoria (carrots) and patata (potatoes), plus the appearance of pellet heels (parsley) and aho (garlic). In addition, dairy products such as milk, raw cream and butter were prepared with various seasonings, white wines, and arrow flour.

"You really use milk..."

There are few dishes in this world that combine seafood with dairy products. Although there are several dishes with cheese and butter, Roland said he has never seen or eaten a dish that uses milk for seafood soup.

Takumi spoke with a smile to Roland, who floated anxiety in front of a faint combination of familiarity.

"When it comes to Almeja soup in my hometown, the“ white ”type of thing with milk was best eaten, so it's okay. Whatever it is, try making it once first and see what it tastes like"

"You got it! Then what am I supposed to prepare from?

The voice returned by Roland was a bright one. I can believe it if it's what Takumi, the master, says. With that in mind, anxiety and stray could once be placed in a corner of my mind.

Takumi gives instructions for the work, feeling relied on by the way Roland looks, who is able to quickly change his mind before work.

"Then please start by carving Sebolia and Sanaoria, Patata. The size is roughly cut into corners of about 1 cm. We ask you to be as big as you can."

"Roger that! Should we cut this meat in the same way?

"No, that one thinly sliced, please. Once sliced, chop in another 1 cm wide or so. I'll move on to Almeja, so watch as you work."

Takumi, who leaves the knife work to Roland, takes Armeja, who has been transferred to the monkey and left drained. When Almeja was placed in a bowl poured with suction water, the dirt was removed while trying to rub the shells together.

The first thing we need to concentrate on under Almeja is this washing operation.

Not only does it remove the sand and dirt on the surface of Almeja, but rather it becomes an important point to play something that is clogged with sand and mud through this washing operation.

In case the sandy Almeja stays and cooks with you, the delicious dishes will be ruined because of it. Needless to say, it is crucial not to miss it here.

Takumi concentrates on its “sound” while rubbing and washing a few Almehas at a time. Be careful when you hear uncomfortable noises. At that time, take the shellfish one by one and beat each other, or hit the kitchen table one by one with the trick to see if the contents are okay.

What seemed strangely high or dull was begun to another monkey.

"Hmm, I just wish I could tell Bakudan from the outside..."

Roland, who watched Takumi's judgment flicker as she peeled off Sanaolia's skin, spills pompously.

Growing up as a family of fishermen, Armeja is one of the ingredients familiar to Roland. Since I was a little girl, I had no choice but to mix bactan (sandy) with the almeha I collected.

But now that I've begun my journey as a cook, I'm more distressed than ever by the troubles of "Bakudan”. I sometimes use Almeja when practicing at my parents' house, but if I stay even a grain, I ruin all my food with sand. When I make a lot at once, etc., it leads to the destruction of ingredients for many people.

Nevertheless, you cannot look inside Almeja until your mouth opens through the heat. That's why I need to hear it through the washing process with "sound," but the work that I can't see with my eyes really makes me anxious.

You perceived something from Roland's words and expression, Takumi roars hmm before communicating her own thoughts.

"Right. You can open the raw Almeja with a dedicated knife and nag it, but if you mishandle it, you're going to scratch Armeja's body because of it. It's laborious, and if it scratches, it's not a good idea for Armeja's delicious juice to escape."

"I knew you were. Then we have to sort it carefully when washing it."

I was hoping somewhere that Takumi, my master, would have some secrets... and Roland would raise his voice. I kept talking to Roland, who gave him a slightly unfortunate look, so that Takumi could tell him.

"That's the thing. It's not going to be easy, is it?"

They then concentrated again on the work.

Having skinned the vegetables, Roland chops the vegetables carefully, but quickly. Both Sanaolia and Patata were cut to a beautiful 1 cm angle.

Takumi, on the other hand, puts the sorted Almeja in a frying pan, sprinkles the white wine and then sprinkles the lid over it and sets it on fire. The frying pan was placed on a well-warmed oven stove ceiling.

If you just think about letting Almeja's mouth open, it's quicker to put it on a rocket stove high fire. But Almeja's body is vulnerable to heat. If you heat it too hard, the juice of the flavor will flow outside, causing it to shrink and harden.

Especially in today's dishes, heat will be added to Almeja's body even after it has been added to the soup. For this reason, Takumi chose the method of passing the fire through Almeja carefully with the weaker heat transmitted indirectly through the oven stove ceiling.

Takumi moving on to the next task while waiting for Almeja's mouth to open. When I took the little knife that was replacing the petty knife, I finely chopped the pellet heel and Aho minced as well. The last thing that chops aho is the consideration of not transferring the smell to other ingredients.

Where his work has come to a paragraph, Takumi checks on the progress of Roland's work. The vegetables are already ready underneath, and the salted meat is about to be chopped.

The following instructions will be given by Takumi to Roland, who has been so handily prepared.

"Then prepare one deep two-handed pan next. Once the butter is melted over low heat, scent it in this aho and fry the salted meat. Put the vegetables in order and heat up somewhat where the fire is coming through."

"The vegetables come in order from the hard stuff! Roger that!"

Having immediately understood the intent of the instructions, Roland prepared a pan as soon as he had finished chopping all the salted meat.

A two-handed pan is set in the space next to the almeha filled frying pan where Takumi is placed and warmed up a little before butter is put in. The slightly yellowish butter soothed without sound, becoming a cream-colored liquid and spreading into a silver pan.

Where the butter melted so well, I added the minced aho to give it a fragrance, in which was added the salted meat I had just chopped.

Roland sautés salted meat while gently stirring in the pan with a wooden bell. Where the fire has passed fairly well, vegetables cut into corners can be added in the order of sanaoria, patata and seboria.

While Roland slowly moves the tree bell, he checks with Takumi about the stir-frying.

"Can we just fry it until Sebolia's clear?

Yeah, that's about it, OK.

Takumi answered Roland's question while rinsing the monkeys and bowls he had used until earlier.

Eventually, the steam slowly rises from the gap in the lid of the frying pan where Almeja was being added and warmed. Looks like it's about time.

A takumi that wipes the snugness on your hand with a white cloth that you use as a hand tug and then opens the lid of the frying pan. White hot air rose from the frying pan and a hint of the sea tickled Takumi's nose.

Almeja, which had been warmed in the frying pan, had about 70-80% of his mouth open. Takumi opened the contents of the frying pan all at once on the prepared monkey.

The bowl laid under the monkey was receiving the brightly white stained liquid that had accumulated in the frying pan. It's a juice full of Almeja extracts. It would be a waste not to miss a drop of this.

Almeja in the monkey was also passing through the fire sequentially due to excess heat, opening his mouth one after another.

"It's time to finish frying!

The voice of the signal from Roland echoes in the kitchen. Takumi, who heard the voice, approached the oven stove and checked what was going on in the pan.

"Sounds like you'll be okay with this. Then, from here on out, we'll take on the pot, so Roland should remove all the Armeja himself that he transferred to the monkey. Be very careful because it's still hot. Please take the juice in the bat and don't miss it."

"Roger that!

When Roland handed Takumi the tree bell, he moved to the kitchen table to strip Armeja of his body.

Standing in front of the oven stove with the replacement, Takumi gently shakes the salt and pepper that will taste inferior when the condition of the ingredients in the pan is checked at a glance.

Takumi, who stirred the whole pot, poured more flavored white wine after adding about half of the chicken stock (chicken bouillon) that he had made with him during lunch into the pan. The idea is to steam it for a while and bring out the flavor of the vegetables.

The pan, to which the soup and white wine were added, was transferred to the central part of the top plate, which also became the hottest, in order to add enough heat.

Takumi, who separates the work on the oven stove side, returns to the kitchen table and retrieves the new bowl.

Not to miss out on Takumi's work, and Roland, who was stripping Armeja, embarked on himself without stopping.

"Today's soup finish is a combination of these."

Takumi, who continues his work while explaining it to Roland. In the bowl in hand was poured milk and raw cream, from which the arrow flour was added while gently shaking with monkeys.

The takumi is stirred in a foam maker making sure to smudge the whole thing, taking care not to dampen the arrow flour.

"Heh, milk and arose powder"

"That's right. Tailor with milk for a mellow milk soup, as well as thicken slightly with arrow flour. This is what makes today's soup so decisive."

"I see. You're gonna learn! Oh, Almeja is done peeling!!

Looks like Roland finished the work at hand while he was watching Takumi's work. Almeja, which has been nicely peeled from its shell, is piled on top of the bat. It looks delicious even if I eat it as it is the first time I have been prickly.

"If you keep it up, it's wine steaming. Why don't you pick one?

Takumi offers a small grain of eye from Armeha's body in the bat to Roland in the palm of his hand. To make sure the ingredients you are cooking taste good.

Roland also answered briefly, bruised, and then picked the offered almeha and threw it into his mouth.

"Mmm, you look puffy and juicy. It tastes like my parents are going to cry and rejoice!

"Cooking this flavour so that you don't miss it as much as you can is the basis of Almeja's cuisine. First of all, do not overheat, and do not miss the juice of the taste. I think I'm going to end up with these two things."

"You got it! I remember my liver!

Roland listens closely to instruction from Takumi. I engraved it in my head once I didn't take notes on my notebook as soon as my hands were free.

"Well, shall we finish it? I'll cook it from here, so watch it on the side."

Takumi speaks to Roland before returning to the front of the oven stove.

First, open the lid of the pan to see how it is cooked. A slightly cloudy soup with plenty of vegetable flavor stained from the pan, which was sounding fuzzy, had a good aroma. The vegetables also seem to have a good fire.

Takumi is a white liquid placed in the bowl at hand - pour all the steamed juice that has been stained with plenty of Almeja extract into the pan.

Once the soup in the white-dyed pan gets quieter, it starts to say fuzzy again when it's been warming up for a while. Just starting to say futsufutsu again, Takumi subtly adjusted the pot storage area.

Because overheating here turns the taste of Almeja into bitter taste.

"All you have to do is simmer with this for about 10 minutes, then pour the arrow flour filled milk that you just made, and let it simmer once, and you're done with the soup. Almeja's body already has a fever, so you can put it in just before you eat it and warm it up to the point that it's okay. The pellet heel is served on a plate and then sprinkled with color."

"Sounds like Almeja won't simmer anyway! I'll write it down on my notebook later!

Takumi nods and responds to Roland's words, yeah, yeah. The work here is one paragraph.

Takumi checks again to see if she has forgotten to work before speaking to Roland.

"Well, let's get cleaned up now."

"You're gonna cook till you clean up! You know that! Leave it to yourself!

Roland, who replied well, quickly wrapped his arms around him and took it to clean up after him.
