It is true that the Mithril Golem is so heavy that it consumes so much magic.

I didn't think I'd make it out of stone either. Stones have low magic conductivity and high difficulty.

More importantly, the stone golem is somehow not exciting.

Iron isn't exciting either, but it's better than stone.
